What's for Breakfast?!

continuing in my culinary adventures, I decided to cook a shrimp and veggie fritatta for breakfast. It turned out pretty delicious if I do say so myself. Mmmmmm lip lickin' good in fact.

Ingredients:
Egg beaters egg whites
red bell pepper
spinach
onions
shrimp (left over from dinner the night before)

Suggested Listening Music:
Anything Jack Johnson

Jack johnson- Flake

mix egg beaters egg whites with a dash of milk
sautee the veggies (cook the red bell pepper and onion first, followed by the shrimp and spinach)
mix eggs and sautee in a bowl
you can either use cupcake liners or cooking spray (I used cooking spray) and spray a large cupcake tin
pour your mix and cook at 425 for 10-15 minutes.
(I know this sounds vague but every oven is different. I just kept checking mine with a fork. Once it wasn't gooey and it started to brown a bit, I took it out)
Let cool a bit, plate it, and add in some toast and a coffee why don't you??!
